At Cheval Blanc Paris, Pastry Chef Maxime Frédéric presents The Easter Bell (La Cloche de Pâques)—a stunning chocolate creation that captures the spirit of Easter, the elegance of craftsmanship, and the heart of Paris.

An Echo of Heritage and Memory
This isn’t your typical Easter treat. Inspired by the majestic “Bourdon” bell of Notre-Dame de Paris Cathedral, Frédéric’s creation pays tribute to both Parisian heritage and personal memory. “Whenever a bell was cast, the whole village celebrated,” Frédéric remembers. “That joy and magic stayed with me.”
Frédéric grew up near Villedieu-les-Poêles, in the Norman village of Trouville-sur-Sienne. The region has been known for centuries for its bell foundry tradition. “Whenever a bell was cast, the whole village celebrated,” he recalls. “That joy and sense of magic have stayed with me ever since.”
Now, years later, that childhood wonder is reborn in chocolate. As Notre-Dame’s bells prepare to ring once more after restoration, The Easter Bell echoes with deeper meaning—hope, memory, and renewal.

A Masterpiece You Can Taste
Visually, the bell is a work of art—elegant, architectural, and richly detailed. Its patina resembles aged bronze and carved wood, but it’s entirely edible. Made with a blend of dark and milk chocolates, the bell is adorned with delicate floral motifs inspired by Cheval Blanc Paris’ own Art Deco design.
But the real surprise is inside.
Break it open and you’ll discover a treasure trove:
Crunchy praline tablets filled with vanilla caramel, hazelnut praline, and crunchy sprinkles from the Lot region
A smooth, rich biscuit praline at the core of the belfries
A gear-shaped decoration, a nod to springtime passionflowers
A wooden-style yoke crafted from caramelised halzelnuts
And a dark chocolate medallion, topped with dried and candied fruits —a sophisticated take on the traditional mendiant
Every bite is thoughtful, every layer deliberate. It’s a dessert meant to be shared, broken with family or friends, and enjoyed slowly.
The Heart Behind the Craft
For Frédéric, Easter is a season of magic. “We make chocolate molds at home with the kids, hide eggs in the apartment and again at the family farm,” he says. “Easter, like Christmas, happens more than once for us.”
At Cheval Blanc Paris, his passion finds a grander stage. As Pastry Chef, Frédéric combines storytelling with technique, turning his own memories into moments his guests can taste and remember.
“I don’t follow trends,” he explains. “I want to create something timeless—something that feels like it’s always existed, yet unforgettable when you experience it.”
